Hey everyone, how is your week going? This week has been a busy one but a good one nonetheless! I am on a mission to make more healthy food this year, which includes yummy, healthy snacks. I decided to make some bliss balls using this recipe from Deliciously Ella – http://deliciouslyella.com/recipe/baobab-energy-balls/ I didnt have any Baobab powder so it was just plain bliss balls really haha. Now unfortunately I only have a blender so I attempted to make then with a blender, Ella uses a food processor……if you want them to be done properly DO NOT use a blender, I was hoping it would work but nope a blender just doesnt cut it…..so my balls came out a bit retarded, they were hard to mould into balls so I just kinda squished them and popped them in the fridge – BUT they still tasted delish and thats the main thing!!
- 1 cup of medjool dates
- 3/4 of a cup of almonds
- 2 tablespoons of chia seeds
- 1 tablespoon of coconut oil
- 1 tablespoon of almond butter
- 1 tablespoon of raw cacao
Place the almonds into a food processor (or blender in my case!) and blend for a minute or so until they are crushed. Then put the dates and add them, plus all the other ingredients, to the processor with the almonds and blend until the mix is nice and sticky.
Roll the mix into small balls, place these in the freezer for an hour or so to set and then store in the fridge.
The retarded end result = delish! I just wish I could afford a food processor!
