Healthy Chocolate Bark

Hi Everyone! I hope you had a lovely weekend and your week is off to a good start. Today was one of those days at work – sigh. But tomorrow is another day!

I am a sucker for chocolate. But I am also health conscious and obsessed with making my own healthy and natural versions. I found a recipe on Mind Body Green for Chocolate bark and basically randomised (that’s so a word ya know!) it with ingredients I had at home, so I don’t have exact measurements for you but have a play and I’m sure what you come up with will taste fab!

To make my chocolate bark I used:

Coconut Oil

Organic Algave Syrup

Organic Cacao Powder

Cashew Nuts

Goji Berries

Basically you melt the coconut oil over low heat, remove, add syrup and stir, add cacao powder and mix. Pour over any nuts etc you want, layered on baking paper in a tin and pour the mixture over. Pop in fridge to set. BOOM. Healthy chocolate snack!
